A simple dish that's so bold in flavour that people will think you've been slaving over a hot stove for hours! This is particularly popular in and around Grosseto, where the octopus is fresh, cheap and plentiful. Serve the soup with bread and a salad.

Preparation time: 20 minutes
Cooking time: 30 minutes
1 white onion
1 medium-sized octopus, ask your fishmonger to clean it for you
1 glass of white wine
salt and pepper
1. Chop the onion and fry in a casserole dish with a drizzle of olive oil until browned. Chop the octopus into eight pieces and add to the dish. Cook covered over a low heat for 30 minutes.
2. Pour the white wine and enough vegetable stock to cover the ingredients. Season to taste and bring to the boil.
3. Sprinkle chopped parsley over the dish and serve with toasted bread.
